Hon-Mai was born in Macao, and came to the USA to attend Clarke College in Dubuque Iowa. Following graduation with a B.A. degree from Clarke, she entered a dietetic internship program at Stanford University Hospital. Upon completion of her internship, she worked as a dietitian at Stanford University Hospital until her marriage. During the years 1978-1983 she was Assistant to the Editor of the Journal of the Optical Society of the America.
